Healthy & Easy Breakfast Ideas for Busy Moms on the Go

Breakfast is my favorite meal—no question. I definitely lean more sweet than savory, but honestly, if it’s breakfast, it’s a yes from me.

With one kid back in traditional school and one still being homeschooled, our mornings can feel a little chaotic. I’ve realized the most successful mornings are the ones where something is already prepared. As much as we love cereal, it keeps you satisfied for about… 20 minutes. So I’ve come up with three of our favorite lazy (but still delicious) breakfast ideas to make mom life a little easier.

1. English Muffin Breakfast Sandwiches

This is a recipe that two-thirds of my house loves. My youngest? He might wake up tomorrow and decide he hates something he’s loved his entire 10 years on Earth—so we just roll with it.

These sandwiches are super easy and actually filling, especially if you meal prep them. I like to make about six at a time. I slice the English muffins in half (toasting is optional), scramble about six eggs, and cook up some breakfast sausage—usually from Trader Joe’s, but honestly, any sausage or bacon works.

Then I add Sargento thin-sliced cheese and assemble the sandwiches. I wrap them individually so they’re ready to grab and microwave. I always add sriracha to mine (of course), and I mix a little cottage cheese into the eggs while cooking for extra protein—especially for my teen.

2. Overnight Oats

We are obsessed with overnight oats. This is one of the most versatile breakfasts ever.

You can switch up the flavors constantly, eat them cold or warm, and if you put them in a cute jar? Instant main character energy.

I start with jars I got from Amazon (I’ve had them for four years now). I usually use the oatmeal from Trader Joe’s that already has chia, flax, and amaranth mixed in. You’ll probably hear me mention Trader Joe’s a lot—a friend named Danny put me on back in 2017, and I haven’t looked back since.

Next, I add milk—we usually use oat or almond, but anything works. Then a little sweetener: honey, agave, or maple syrup. After that, I layer in fruit. Some favorites:

If I’m adding banana, I wait until right before eating so it doesn’t get soggy.

Pop the lid on and put it in the fridge. You don’t actually have to wait overnight—I’ve eaten it after 30 minutes to an hour and it’s still good. If you make 3–4 jars at once, breakfast is handled for the next couple of days.

If you like the concept but want something even quicker, I also love Oats Overnight. My uncle gifted me a subscription, and the Piña Colada flavor is top tier—like, the toppest of tiers. It comes with a shaker, which I do use, but I still prefer mine in a jar or bowl.

3. Oven-Baked Pancakes

This one is my favorite. It’s for those mornings when you want pancakes but absolutely do not feel like standing there flipping them.

You just mix your pancake batter (boxed or homemade—no judgment here), pour it into a pan, add fruit if you want, and bake it in the oven. That’s it. Pancakes, without the extra work.

Since it’s spring, I’ve been loving a lemon blueberry version—it’s so good. Once it’s done, slice it like a pie and serve.

And I’ll be honest, I prefer using a skillet because it makes me feel important… like a seasoned mom chef.


I have so many breakfast ideas, this might need to be a Part One situation.

Breakfast just feels cozy and nostalgic to me. It reminds me of big family breakfasts after Christmas, or random sleepovers after a party or barbecue. There’s just something special about it.
